Chimichurri! and a tomato, cucumber feta side salad.

Chimichurri makes my heart flutter.  I freakin' love the stuff.  I usually make a big batch of it and have it ALL week.  I put it on eggs, chicken, steak.  


Here is a list of ingredients.  I'm not adding the amounts because it really is up to your taste preference.


cilantro chopped

flat leaf parsley chopped

garlic minced

red onion minced

shallot minced

olive oil

red wine vinegar

jalapeno or serrano pepper

salt n peppa

Mix it all together and enjoy.  I love using this as a marinade, too.


Tomato Side salad

Cherry tomatoes halved

cukes sliced then cut in half

feta cheese crumbled

olive oil

balsamic vinegar

mix that all together.  Then have a party in yo mouth!
